Deep Dark Chocolate Avocado Pudding
-with a high-protein option
Do not let the avocado scare you off. You’ll never know it’s there! Trust...
Lots of folks are looking to keep carbs low, and get some healthy fats and protein into their diet. This recipe does all that with creamy, dark, chocolaty pudding.
Ensure you have sufficient chill time before serving. It makes a big difference!
2 large ripe avocados - pitted, scooped out, and halved
6 tbsp unsweetened cocoa
5 tbsp fine xylitol crystals (I buzz mine in the food processor) or sweetener of choice
¼ to ⅓ cup of ‘milk’ (heavy cream, almond or coconut milk)
1 - 2 scoops Keto Raw Protein (optional)
16 raspberries (optional)
Place all ingredients into a food processor. Blend until smooth, scraping down the sides of processor with a spatula, as necessary.
*If you add Keto Raw, you will need to add more cream or milk - 1 tbsp at a time until desired consistency is reached.
Place 4 raspberries (if using) in each of 4 small dishes. Carefully spoon the pudding over the raspberries. Divide pudding equally among the 4 dishes. Chill for at least 2 hours for best results.
